Go to the kitchen and get out the ingredients to whip up with ease…

Fresh Fruit

Delightful Breakfast Roll

Ups with Fresh Fruit

You’ll need:
Enova® oil
Turkey bacon
Egg substitute, enough for how ever many you’re feeding
Green Onions, a big pinch
Diced Tomatoes
Mushrooms
Mrs. Dash®
Crushed Garlic clove, fresh is always best
Wheat Tortilla wrap or wheat Pita bread
Fresh fruit, berries or cantaloupe… you choose

 

Cook bacon crisp. I suggest you put it on a griddle with a little Enova® oil and cook it until it’s crispy, drain on paper towel and crush into bits, not powder.
Take a little more Enova® oil to coat the bottom and sides of the pan, heat on medium, add green onions, mushrooms, Mrs. Dash®, Crushed Garlic clove and sauté, when you smell the aromas, add the egg substitute, scramble and add diced tomatoes, remove from heat and roll up in a warm tortilla or stuff in a pita pocket, add some sliced tomatoes with black pepper now… sit down and enjoy!

I don’t care how much you make, only put enough on your plate to fit on a small salad plate and use the big plate as a charger plate. (That’s where you put the little plate on top of the bigger plate. When you eat neat, you won’t get the big plate messy! LOL)


Have a Snack about 3 hours after breakfast… a nice chilled juicy sweet orange

Stop tripping; this is all you need to eat now!

 

Spicy Dilled Tuna Salad

Spicy Dilled Tuna Salad

 

You’ll need:
1 can of water packed tuna, the little one
Old Bay Spice®
Hot Hungarian Paprika®
Granulated Garlic
Mrs. Dash®
Black Pepper
Miracle Whip Lite®
Vlasic Kosher Dill Spears®, diced
Crisp Red Lettuce leaf
3 Sliced Tomatoes with black pepper
8 oz cooled water

 

Open a can of water packed tuna drain a little (you want some moisture in your tuna)
Add the rest of the ingredients, toss well, place sliced tomatoes on top of your salad and serve chilled on a crisp red lettuce leaf, sit down, eat and enjoy! Wait a while (at least 20 minutes) then drink the water after your meal meets your digestive system.

Dinner

The Dinner Menu 

 

Mothers Fish Dish

Mother’s Fish Dish

Grilled Tilapia, Great Northern White Beans and Smoked Turkey with Grape Tomatoes & Leeks, nestled over Fresh sautéed spinach.


You’ll need:
4 pieces of Tilapia fish, seasoned to taste, or blackened spice
1 stick I can’t Believe It’s Not Butter® melted
Garlic, crushed
Old Bay Spice® No salt
1 lb of Great Northern White Beans
Smoked Turkey (wings, legs, butts whatever you like)
Leeks, chopped fresh
Grape Tomatoes, sliced
Fresh Spinach, steamed

 

Prepare beans according to package directions or cheat and use them in the can. Boil the smoked turkey meat until it falls off the bone, cool and chop fine add smoked meat, 1 large can of Swanson Chicken Broth® to beans, simmer until tender add leeks and tomatoes. Simmer until beans are tender and juicy.
Season fish and make ready for grilling. I use indoors the George Forman Lean Mean Grilling Machine® (because it works so well on grilling) heat that baby up to 400 degrees, while it’s getting hot, pat dry your fish, dredge your fish in melted ”I can’t Believe It’s Not Butter® coat well with spices and grill for 6-8 minutes. While that’s working on the G Foreman, steam the fresh spinach until it’s a bright green, remove from heat so its does not get over cooked. Now for the pretty part…
Place the steamed spinach first on a hot plate, add the white beans and top it with that moist grilled flavor kissed Tilapia and you are in for some good eating! I told you this would be good…Try it! The let me know how it turned out.

Slammin' Blackened Salmon Salad

What you'll need: Salmon plank, Blackened spices, I Can't Believe its not Butter, George Forman Grill ( If you don't have one get three) I have six of them!

Ingredients:
Mixed Greens
Sliced Tomatoes
Sliced Cucumbers
Pecan Glaze:
1/2c. chopped pecans,
1/2c. brown sugar
I can't Believe its not Butter

Heat the GFG til very hot
Melt 1/2 c. of butter
Pat dry the skinless salmon and drag in the butter, sprinkle generously on both sides with a blackened spices (pick one you like).

Place on the George Forman put the lid down and start your salad, you can hook that up. Be creative. Sprinkle with Mrs.Dash (my secretingredient). Chill. Start the pecan glaze. heat the butter brown sugar and chopped nuts until butter melts and sugars liquifies, keep warm, {if it cools you have candy}.

Once salmon is done remove from the grill take the drippings and drizzle over salad. Put greens on a chilled plate, place a slice of the salmon plank add the pecan glaze your favorite salad dressing which you really don't need because this salad has its own flava!

Group Meals

Here is a jamming dish for a Bunch of Folks! Watch your guests... because they will try to stash some for later. We had Plantation Shortcake from my friend's kitchen and it was OFF THE HOOK! Have fun with PLANTATION SHORTCAKE experiment and look like you know how to Throw Down!

Make some cornbread batter, if you cannot make cornbread from scratch (or know how to cheat) you are not ready to make this dish!

Ingredients:
1c. Cream Style Corn
Some onions
Colorful peppers
Mushrooms
Fresh sweet basil
Drain some chopped spinach or other veggies you like
1c. medium cheddar cheese
1c. sharp cheddar cheese
Boil some skinless chicken breasts (you'll know how much by how many you're feeding)
Make some white sauce (see 1st ingredient)
Ok you can cheat with Cream of Chicken soup
A little hot hungarian paprika (my secret ingredient)
Shortcake: Preheat oven to 400 degrees. Make cornbread from scratch following directions and add 1 c. cream style corn or shortcut it, for every box of Cornbread mix -- use one can of cream style corn and an egg. Make sure the batter is thick. In a loaf pan layer with half the batter -- then use 1 c. shredded cheese (recommendation: Medium or sharp cheddar and a white cheese.) Layer with 1c. veggies, make sure you drain them of any liquid (spinach, peppers, artichoke... brocolli will work, don't chop it too big or to small) Then add another layer of cheese, topped with the rest of your batter. Bake as directed.

Chicken Cream Sauce: In a separate pot, Boil boneless skinless chicken breasts in crab boil until pink and almost done about 10- 15 minutes depending on how much you're making. Use one box of crab boil for every 3 lbs. Flake the chicken add it to the Cream of Chicken base/soup. Sautee onions, garlic, peppers, mushrooms, and sweet basil. Then mix with the Cream of Chicken base/soup. Go crazy with the seasoning -- experimenting with the flavor. Bake until a toothpick, straw or knife comes out clean. Let the shrtcake cool befores slicing. It never comes out the same and that makes it a fun and unique dish for parties. Share the Love!

You can also mix boneless skinless chicken thighs for added taste. drain, flake and set aside. Make a basic white sauce add cooked flaked chicken You can use Cream of Chicken Soup, add only a 1/4 can of milk.

For large parties use at least 5 lbs of chicken breast. Use 1 lb of breast for every cup of base/soup.

Let the shortcake cool before slicing and top with the cream sauce. Stand back and accept the accolades.
